We eat a lot of carrots but not often are they cooked. The boys love a raw carrot to snack on and they make great garden snacks straight from the ground when we grow them.
This year we are growing long purple carrots and round orange carrots.
In the summer we often make a simple salad with grated carrot as a side dish. It is also great in wraps or flat breads (recipe for those to come) or mixed in to a simple salad.
This is the original recipe but it is now made by eye and taste and I will add or remove ingredients depending on what we have available.
For 2 -
2 Med - Large Carrots, grated
1 tsp Wholegrain mustard
2 tsp Lemon juice
1/4 Red onion, grated
Honey, to taste
Mix together the mustard and lemon juice.
Add the grated carrot and onion and mix to coat.
Add honey, teaspoon to start.
Add a little oil to loosen. We use our own garlic oil.
Once you've made it you'll know for future how many carrots you'll need for yourself. It keeps well but you'll find that it becomes very watery from the grated carrots and onion.
